Sophie’s Pan-Fried Sea Bass Croquettes

A heavenly pan-fried triumph, where a leftover fish fillet is the star.  Enjoy.

1 Wild Sea Bass Fillet, Cooked And Finely Chopped, Skin On

3 Eggs


1/4 Onion, Peeled And Finely Chopped

2 Garlic Cloves, Peeled And Minced

1 Scallion, Washed And Thinly Sliced

Lemon Juice

Garlic Salt, to taste

Ground Black Pepper, to taste

Olive Oil

1. In a small bowl, combine sea bass, eggs, breadcrumbs, onion, minced garlic, thinly sliced scallion, lemon juice, garlic salt, and ground black pepper.

2. Heat oil in a pan, and pour in some of the sea bass mixture. Over low heat, form into a patty, and pan-fry until the bottom is crisp and golden brown. Flip, and repeat with the other side. The inside should be white and flaky. Repeat with the remaining sea bass mixture.

3. Put one patty on a plate, and serve with your favorite dip if desired. Cut, and enjoy.

Yields: 3 patties
