Blue Apron: Week 9: Day 2

I know it’s a little late, but we decided to hold off on the miso udon noodle soup with purple daikon, bok choy and soft-boiled eggs until now.  I don’t know if I’m to try it, but that’s ok.  Again, I may not have gotten to make it either, but that’s also ok.  I don’t mind.  Not one bit.
