Bacon and French fries all wrapped into one delicious appetizer that can also function as a side dish. Enjoy.
1 Russet Potato, Washed, Peeled, And Sliced Into Fries
2 TRISCUIT Roasted Garlic Crackers, Processed Into Crumbs
1. Preheat the oven to 400 degrees F.
2. Lay down a slice of bacon, and place an equal number of potato slices on top of each end of the bacon, making sure each end has 3 to 5 potato slices. Place 1 to 2 potato slices in the middle of the bacon if you want to, and roll the bacon up from one end to the other, making sure to keep as many potato slices in the bacon as possible. If a potato slices falls out, either rewrap the bacon, or use that potato slice for another bacon wrapped fry bundle.
3. Oil a cast iron skillet, cook the bacon wrapped around the potato slices over low heat until they are nice and crisp on the bottom side, and sprinkle with half of the processed crackers. Use a spatula or two to carefully flip the bacon wrapped fries to the other side to make sure they all cook evenly, sprinkle with the rest of the processed crackers, and bake until the bacon and fries are cooked through. If they fell apart and did not all stay together when you flipped them, that is okay.
4. Remove from oven, drain on a paper towel, and enjoy.
