Sophie’s Cheesy Tater Tots

A quick and easy side or breakfast with potatoes, cheese, and only 3 steps.  Enjoy.

1 Russet Potato, Washed, Peeled, And Grated

Olive Oil

2 Whole Eggs


Sharp Cheddar Cheese, Grated 

1. Squeeze moisture out of grated potato, and combine in a medium bowl with eggs, breadcrumbs, and sharp cheddar cheese.  Form into balls, and slightly flatten to form discs.

2. Oil a pan, and fry the tots in batches until golden brown, flipping them when necessary.

3. Remove from pan, and drain on a paper towel. Let cool, and enjoy.

Yields: 6-7 tater tots
