A delicious 3 step breakfast with my ranch dressing inspired by Ree Drummond spooned over the top. Enjoy.
2 Whole Eggs
1 Cup Mayonnaise
2 Cups Greek Yogurt or Sour Cream
2 Garlic Cloves, Peeled And Grated
1 tsp Lemon Juice or White Balsamic Vinegar
Salt and Pepper, to taste
Fresh Parsley Leaves, Washed And Chopped
Fresh Dill Weed, Washed And Chopped
Fresh Chives, Washed And Chopped
1. In a saucepan, boil eggs in salted water, turn off heat, and let sit for 15 minutes.
2. Remove from pan, and rinse under cold water. Peel eggs, and mash them together in a bowl.
3. In another bowl, combine mayo, Greek yogurt, grated garlic, lemon juice, lemon zest, salt and pepper, chopped fresh parsley leaves, chopped fresh dill weed, and chopped fresh chives, and stir into eggs. Pour leftover dressing into a container, refrigerate until further use, and enjoy.
