Sophie’s Chicken Pasta Salad

A delicious variation of pasta salad with chicken and some cilantro to top it off.  Enjoy.

1 box Pasta

1 piece Refrigerated Grilled Chicken, Cut Into Bite-Size Pieces

Olive Oil

1 Scallion, Washed And Thinly Sliced

2 Garlic Cloves, Peeled And Minced

Chicken Broth


Soy Sauce, to taste

a splash Worcestershire Sauce

2 tsp Cornstarch or All Purpose Flour

2 Tbsp Brown Sugar

Fresh Ginger Root, Peeled And Grated, to taste

Fresh Cilantro Leaves, Washed And Chopped

1. Cook pasta according to package directions, drain, and set aside.

2. In a small bowl, combine chicken broth, mayonnaise, soy sauce, Worcestershire sauce, cornstarch, brown sugar, and grated fresh ginger, and whisk.  This will become a flavorful sauce for the pasta salad.

3. Oil a pan, and throw in scallion and garlic. Sauté for a few minutes, and add grilled chicken and pasta to heat up.  Add the sauce, lower heat, and stir.

4. Remove from pan, and sprinkle on cilantro.  Serve with burnt broccoli and cauliflower if desired, and enjoy.

Yields: 5-6 servings
