Sophie’s Pan-Fried Chicken Croquettes

A chicken, onion, and garlic patty with spices and herbs for flavor.  Enjoy.

2 Cups Boneless, Skinless Chicken Breasts, Cooked and Finely Chopped

2 Whole Eggs


1/2 Onion, Peeled And Finely Chopped

2 Garlic Cloves, Peeled And Minced

Soy Sauce, to taste

1 tsp Salt

1 tsp Ground Black Pepper

1/2 tsp Onion Powder

1/4 tsp Garlic Powder

1/4 tsp Garlic Salt

1/4 tsp Allspice

Zesty’s Italian Salad Dressing Seasoning

1/4 tsp Ground Thyme

1/4 tsp Dried Oregano

1/4 tsp Dried Basil

1/4 tsp Dried Cilantro

Olive Oil

1. In a small bowl, combine chicken, eggs, breadcrumbs, onion, minced garlic, soy sauce, salt, ground black pepper, onion powder, garlic powder, garlic salt, allspice, Italian salad dressing seasoning, ground thyme, dried oregano, dried basil, and dried cilantro.

2. Heat oil in a pan, and pour in some of the chicken mixture. Over low heat, form into a patty, and pan-fry until the bottom is crisp and golden brown. Flip, and repeat with the other side. The inside should be fully cooked. Repeat with the remaining chicken mixture.

3. Put one patty on a plate, and serve with your favorite dip if desired. Cut, and enjoy.

Yields: 4 patties
